This is my third baking instalment lately, and I’m really enjoying it! It might be because everything I’ve made so far has been a success, and everyone knows when you do good, you want to do more. This time, I tried my hand at cookies. I love a good cookie – a gooey chunky one and whenever Ben’s Cookies is around, I can’t resist.
I’m also a huge peanut butter fan – anything PB flavoured and I’m on it. Saying that, I always think peanut butter cookies could do with some chocolate in them to keep them moist, so when I saw that the Hummingbird Bakery recipe included chocolate chunks, I was all over it.
I don’t own the Hummingbird Bakery book (…hell I don’t own any cookery books. Yet), but I found the recipe online here. My cookies took about 15 minutes to cook and I took them out the oven when they still looked pretty soft, to make sure they were gooey and not too crunchy. Personal preference of course! I’ve also shown two ways you can present your cookies – one being on a simple plate with a nice cuppa, and the other is more of a gift idea by tying different coloured ribbons around a stack of cookies for something a bit more fun!
