If you saw this post about our perfect birthday tea party, you’ll know that baking isn’t my forte. Actually, let’s rephrase that – it wasn’t my forte, but I’m learning. I thought I’d make it a bit of a series on my blog – learning to cook and bake with Kat! After my rather ambitious naked cake creation, I noticed we had one too many punnets of blueberries in the fridge. Saying that, we also only had one egg left after my mamouth bake-a-thon, so I searched high and low for a blueberry muffin recipe that only required one.
I came across this one from the UK TV website – it said it was easy, and it said you only needed one egg. Perfect! It was just that, very simple and they rose well in the oven. I’ve found that if I use the fan oven, my cakes are pretty flat so using the oven as normal is key for me. They’re super moist and not too sweet which is a nice change from a chocolate muffin. My second baking task is complete!
